Plating time is the binding constraint
Dishes involving many precisely placed components take minutes of skilled attention each, and that attention cannot be performed in parallel by the same hands.
Multiply that by the number of courses in a tasting menu and the kitchen's total plating capacity for an evening becomes a calculable number.
That number, not the size of the dining room, determines how many guests can be served, which is why seats are often left unsold.
Preparation happens long before service
A large share of the work occurs during the day: stocks reduced, elements cured or fermented, garnishes cut, sauces built in quantities decided in advance.
Those quantities are committed hours earlier, so a kitchen cannot respond to unexpected demand without either running out or wasting expensive product.
This is why walk-ins are rarely accommodated and why cancellations are handled with deposits, since an empty seat represents preparation already paid for.
Ingredient supply sets its own ceiling
Some components arrive in genuinely limited quantities: a specific fish landed that morning, a short-season vegetable, an aged product with a fixed stock.
Building a menu around such items means the number of portions is decided by the supplier rather than by the restaurant's ambition.
Restaurants therefore design menus knowing the constraint, and a dish disappearing mid-service reflects the supply chain rather than poor planning.
Why service runs on staggered seatings
Guests are seated in waves so that courses from different tables do not all reach the pass at the same moment, smoothing the load across the evening.
A single seating time would concentrate every first course into one window, which the kitchen could not deliver at the required standard.
Arriving late therefore disrupts more than one table's timing, which is why these restaurants hold reservation times firmly rather than flexibly.
